Meet Laura

The chef, designer and confectionery artist of Confectionate Cakes is Laura Elgaard, the former owner of “Laura’s Cakes and Pastry”, a retail bakery located in historic downtown Apex, NC.  Laura is a skilled pastry chef who received the first of her culinary training in Florida. Laura has committed years of self guided training and intense study to refined her skills and sense of culinary style. While Laura specializes in wedding and all occasion cake designs and decoration, she is also an experienced baker that creates a unique variety of pastry items including tarts, cream puffs, eclairs, biscotti and much much more.

1. What inspired you start your business?

A catering friend of mine knew I did cakes for people on the side and asked me if I was interested in getting into the wedding side of it.  I gave it a chance and more and more people were asking me to do theirs.  It became enough, that I decided to turn it into a business.

2. How did you come up with your business name?

The original name of my business was Laura’s Cakes and Pastry.  Not real original and I wanted something else.  I restructured the business and wanted to do something with the word Confections.  Also, the word affectionate kept coming to mind….So, I “married”  (LOL) the two and added Cakes.  And Confectionate Cakes was born.

3. What three words would you use to describe your business?

Fair, unique, relaxed

4. What is your favorite part about working in the wedding industry?

 I love helping people.  Their wedding in one of the most important day in someone’s life and I like helping make it even more memorable with a fabulously delicious and beautiful cake.

5. What makes your business unique?

I’m very flexible.  My menu is a suggestion…a starting board.  My philosophy is that, this is their day and they should have the flavor or flavors that they want.  Not just having to stick to what is on the menu.  I’ve done some very different flavors for couples and they were very appreciative to my willingness to work with their desires.

I also see my business and very personable.  It’s not just a business, I become part of so many people’s lives.  I’ve done peoples weddings and now doing birthday cakes for their kids for years.  I have some customers who I’ve been doing cakes for for over 15 years.

6. Who is the team behind your business?

My team of me, myself and I do a fantastic job working together.  My husband is a wonderful support person and willing to step in when needed as well.

7. What is your baking style?

I specialize in wedding cakes, but I do all kinds of special occasion cakes as well.  I’ve done very classical wedding cakes, to outrageously decorated ones.

8. What is your favorite part of the wedding ceremony/reception?

Since my job is finished before anything gets started….I don’t get to see the ceremony or reception.  Although, I have been hired to come back to cut and serve the cake.  Then I get to see that part.

9. What are three things in life you can’t live without?

God, my family and mascara
